Turai aur Anday ki Bhurji By Shireen Anwar

Ingredients:

  • Ridge Gourd (sliced) half kg
  • Oil half cup
  • Curry leaves 15
  • Onion (finely chopped) 1
  • Green Chilies (finely chopped) 6
  • Turmeric Powder ¼ tsp
  • Salt 1 tsp
  • Eggs (beaten) 2
  • Coriander leaves 2 tbsp

 

Method:

  1. Peel gourd and slice very finely.
  2. Heat oil, add curry leaves and the chopped onion and green chilies, when onion soft add toorai Turmeric powder and salt.
  3. Cover pan and cook about 20 min, add in beaten eggs stirring continuously.
  4. Cook till done.
  5. Add coriander leave and serve with Roti.
