Szechuan Chowmein Recipe by Shireen Anwar

Ingredients:

  • Egg Noodles 1 packet
  • Chicken breast (Boneless, cut in long strips) 2
  • Salt ½ tsp
  • Black Pepper ¼ tsp
  • Soy Sauce 1 tbsp
  • Corn Flour 1 tbsp
  • Carrot (Julienned) 1 cup
  • Capsicum (Julienned) 1 cup
  • Cabbage (Julienned) 1 cup
  • Ginger (Julienned) 2 tbsp
  • Garlic (Crushed) 1 tsp
  • Spring Onion Leaves 1 cup
  • Oil 1 cup

 

Ingredients for Sauce: 

  • Soy Sauce 3 tbsp
  • Vinegar 2 tbsp
  • Sugar 1 tbsp
  • Szechuan Sauce 1 tbsp
  • Chili Sauce 1 tbsp
  • Salt ½ tsp
  • Black Pepper ½ tsp
  • Red Chilies (Crushed) 1 tsp

 

Method for Chicken:

  1. Marinate chicken strips with salt, black pepper, corn flour, soy sauce for 10 minutes.
  2. Shallow fry and remove.
  3. Heat 3 tbsp oil, and to it add chopped ginger and garlic. Sauté for 1 minute.
  4. Add cabbage, carrot and capsicum.
  5. Fry on high flame for 2 minutes and remove.
  6. Keep aside.

 

Method for Sauce:

  1. Mix all the ingredients for the sauce in a pan and cook.
  2. Fold in the boiled noodles, chicken and vegetables.
  3. Mix well and serve.
