Ingredients for base:
- Flour 8 ounces
- Butter 4 ounces
- Caster sugar 2 ounces
- Egg yolk 1
- Vanilla essence 1 tsp
Ingredients for filling:
- Butter 4 ounces
- Sugar 4oucnes
- Eggs 2
- Desiccated coconut 2 ounces
- Flour 2 ounce
- Baking powder 1 tsp
- Coconut essence ½ tsp
Method for base:
- Beat butter and caster sugar till light and fluffy add in egg yolk and beat.
- Add vanilla fold in the flour, and knead lightly chill for 15 minutes.
- Roll and spread on a nine inch tart tray.
- Spread the base of tart with strawberry jam top with the prepared filling bake on 180 degrees for 25 minutes till top light golden.
Method for filling:
- Beat butter and sugar till light and fluffy.
- Add in egg yolks one at a time and continue beating add coconut essence beat egg white stiff fold in the mixture.
- Sieve flour and baking powder mix with coconut fold in the butter mixture.
- Pour this on top of the strawberry jam and bake.
