Coconut Jam Tart by Shireen Anwar

Ingredients for base:

  • Flour 8 ounces
  • Butter 4 ounces
  • Caster sugar 2 ounces
  • Egg yolk 1
  • Vanilla essence 1 tsp

 

Ingredients for filling:

  • Butter 4 ounces
  • Sugar 4oucnes
  • Eggs 2
  • Desiccated coconut 2 ounces
  • Flour 2 ounce
  • Baking powder 1 tsp
  • Coconut essence ½ tsp

 

Method for base:

  1. Beat butter and caster sugar till light and fluffy add in egg yolk and beat.
  2. Add vanilla fold in the flour, and knead lightly chill for 15 minutes.
  3. Roll and spread on a nine inch tart tray.
  4. Spread the base of tart with strawberry jam top with the prepared filling bake on 180 degrees for 25 minutes till top light golden.

 

Method for filling:

  1. Beat butter and sugar till light and fluffy.
  2. Add in egg yolks one at a time and continue beating add coconut essence beat egg white stiff fold in the mixture.
  3. Sieve flour and baking powder mix with coconut fold in the butter mixture.
  4. Pour this on top of the strawberry jam and bake.
