Cold Pasta Salad by Zarnak Sidhwa

Ingredients:

  • 2 cups pasta
  • 1 cucumber, chopped
  • 1 small onion, finely chopped
  • 2 tomatoes, quartered
  • 1/4 cup pitted black olives, sliced
  • 1 cup Italian-style salad dressing

 

Method:

  1. Fill a large pot with lightly salted water and bring to a rolling boil over high heat.
  2. Once the water is boiling, stir in the pasta and return to a boil.
  3. Cook uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes.
  4. Drain and cool by running cold water over the pasta in a colander set in the sink.
  5. Combine cooked and cooled pasta with the cucumber, onion, tomatoes, and olives in a large bowl.
  6. Pour the Italian dressing over the salad and stir to combine.
  7. Cover and refrigerate for at least two hours before serving.

 

Italian-Style Salad Dressing:

 

Ingredients:

  • Olive oil 1 cup
  • Juice of 1 lemon
  • Salt ¼ tsp
  • Black pepper ¼ tsp
  • Crushed garlic 2 cloves
  • Sugar a pinch

 

Method:

  1. Mix all ingredients and chill till serving.
  2. Pour over salad and serve.
