Mango Jam Recipe

Ingredients:

  • 4                      mangoes
  • 1                      Lemon Juice
  • 1⁄2 lemon     Lemon Zest
  • 1-1/2 cups     Sugar
  • As required   water

Method:

  1. Peel and dice mangoes.
  2. Measure mangoes, pour into a kettle, and add equal amount of sugar.
  3. Add juice of 1 lemon and zest of 1/2 of lemon.
  4. Add just enough water to keep from sticking, about 1/4-1/2 cup.
  5. Cook until soft.
  6. Immersion blends until smooth or work in batches with a blender.
  7. Cook until thickened.
  8. Pour in jars and seal.
