Ingredients:
Chicken with bones 1/2 kg
Chopped garlic 8-10 cloves
Chopped ginger 1-inch piece
Mint leaves few sprigs
Coriander leaves 1 bunch
Onion (diced) 1
Tomatoes (cut in large pieces) 2
Turmeric powder 1 tsp
Chili powder 1/2 tsp
Garam masala powder 1/4 tsp
Black pepper powder 1 tsp
Lemon juice of 1 lemon
Sugar 1 tsp
Salt to taste
Mixed vegetables (chopped) as required
Coconut milk 1 cup
Corn flour to thicken (optional) 1 tbsp
Method:
Put all ingredients except vegetables & coconut milk in a pressure cooker with 6 cups of water. Bring to pressure, lower heat to medium & cook for 10 minutes. Once the pressure comes down, open the cooker & remove the chicken pieces. Strain the soup. Add the vegetables and coconut milk to the soup & boil till veggies are cooked. Debone the chicken pieces, cut it into little pieces & add it to the soup. Add more lemon juice or salt if needed. If you want to thicken it, you could add corn flour, mixed in a little cold water, to the soup & give it a boil. Garnish with coriander leaves and serve.
