Ingredients:
- Oil 2 tbsp
- Finely Chopped Onion 1
- Garlic Cloves Crushed 2
- Capsicum, diced 1
- Dried Oregano 1 tsp
- Ground Coriander 1 tsp
- Ground Cumin 2 tsp
- Chili Powder 2 tsp
- Chicken Mince 500gram
- Tomato Paste 2 tbsp
- Chopped Tomatoes 2
- Corn 1 cup
- Kidney Beans Boiled 1 cup
- Flour Tortillas 4-5
- Cooked Rice 1 cup
- Grated Cheese 1 cup
- Sour Cream to serve
Method:
- Heat 1 tablespoon oil.
- Add onion. Cook, stirring, until softened.
- Add garlic and capsicum. Cook.
- Add oregano, coriander, cumin and chilli powder. Add mince.
- Cook until browned and cooked through.
- Add tomato paste and chopped tomatoes.
- Simmer, covered, till mince is done.
- Add corn and kidney beans. Season with salt and pepper.
- Remove from heat. Set aside to cool for 10 minutes.
- Place 1 tortilla on a flat surface.
- Top with 2 tablespoons rice.
- Top with 2-3 tbsp of the mince mixture.
- Sprinkle with 2 tablespoons of cheese. Roll up to enclose filling. Repeat with remaining tortillas, rice, mince mixture and cheese.
- Serve with sour cream.
