Ingredients :
Rice 2½ cups
For the Chicken:
Oil 1 tbsp
Onion Sliced 1
Garlic Crushed 2cloves
Chopped Ginger 1 tsp
Chicken Breasts Cubes ½ kg
Chicken Stock Cubes 2
Tomatoes( peeled and pureed) 2
Yoghurt ½ cup
Lemon Juice 1 tsp
Tomato Paste 2 tbsp
All Spice Powder 1½ tbsp
Turmeric ½ tsp
Coriander Leaves Chopped 2 tbsp
Mint Chopped 2 tbsp
Method :
Boil previously soaked rice with water, once it boils, cover and simmer for 15 minutes or until rice is cooked. Set aside. Meanwhile, heat oil, brown the onion. Add garlic and ginger and stir until fragrant. Add chicken and stir until it is sautéed. Add stock cubes, tomato, yogurt, lemon juice, tomato paste and spices. Bring to boil and simmer for 10 minutes and cook till chicken is done. In a deep pan, place half the quantity of the prepared rice and the chicken mixture on top. Sprinkle the chopped coriander and mint over the chicken mixture and cover the top with the remaining rice. Cover firmly with the lid and simmer on a tawa over low heat until rice is completely cooked.
