Egg Bhurji Paratha Recipe by Shireen Anwar at Masala Mornings

Ingredients for Egg bhurji
Egg                                4
Onion                            4 tbsp chopped
Green Chilies                        3 chopped
Tomato (seedless, chopped)        1
Turmeric                        ½ tsp
Chili Powder                        ½ tsp
Salt                                ½ tsp
Coriander Leaves                    4 tbsp
Oil                                3 tbsp
Ingredients for Paratha Dough:
Flour                            3 cups
Wheat Flour                        1 cup
Salt                                1 tsp
Sugar                            1 tbsp
Oil                                ¼ cup
Water                            to knead

Method:
In a bowl, mix all together, knead with water to form a smooth medium dough, keep aside, cover for ½ hour.
To make Parathas:
Take 2 small ballas of dough, roll them to 6 inch inches, round, spread with egg fillings, cover with the second roti, press to seal, dush with flour and roll further to 8 inch, shallow fry.
Method fro egg bhurji:
Heat oil in a pan, soute onion and green chilies, add seasonings, then beaten eggs, cook till done about 5 minutes
