NAURATTAN BIRYANI by Shireen Anwar at Masala Mornings

Ingredients:
Rice 750 gms boiled
Brown onions 1 cup
Carrot 2 cut into cubes
Potatoes 3 cut in cubes
Peas 1 cup
Brinjals 2 cut in cubes
Spinach washed and chopped 3 cups
Methi leaves 4 bunches
Tomatoes 4 sliced
Beans chopped in 1 inch pcs 1 cup
Coriander leaved and mint leaves ½ cup
Ginger garlic paste 1 tbsp
Salt 1½ tsp
Chili powder 2 tsp
Coriander powder 3 tsp
Roasted and crushed cumin 1½ tsp
Turmeric ½ tsp
All spice 1 tsp
Kewra water 1 tbsp
Yellow color ¼ tsp
Milk ½ cup water
Oil ½ cup

Method:
Boil the rice with 2 tbsp salt, 1 tbsp whole mixed spices till half done. Keep aside. Heat oil; add onion.Fry till light golden. Add ginger garlic with all the spices tomatoes. Fry well adding half cup water. Add all the vegetables with 1 cup water. Cover and cook till all done.  In a pan layer half the boiled rice. Put the vegetables mixture and remaining rice, yellow color and kewra mixed in milk. Leave it on dum for 20 mins.
