Egg and Mushroom Buns by Shireen Anwar at Masala Mornings

Ingredients:

  • Burger buns             4
  • Butter                 2 tsp
  • Eggs                     4
  • Cheese grated             4 tbsp
  • Mushrooms sliced         4 tbsp
  • Onion chopped             3 tbsp
  • Salt and pepper             ½ tsp each
  • Ketchup                 4 tbsp
  • Coriander leaves         2 tbsp
  • Crushed red pepper         for garnishing

Method:

  1. Slice the top of each bun and scoop out nicely to make a hollow bun leaving quarter inch wall all around.
  2. Spread some ketchup in the hollow of the bun.
  3. Butter the edges and the sides of the buns and keep aside.
  4. Heat 1½ tbsp of butter.
  5. Fry onions till soft. Add mushrooms and cook for 2 mins.
  6. Remove from heat, add salt and pepper.
  7. Spoon this mixture in the hollow buns.
  8. Break the raw egg in a bowl. And gently put it over the mushroom mixture.
  9. Be careful not to break the egg yolk in the bun.
  10. Repeat the same with all the buns. Sprinkle cheese over the egg.
  11. Bake in a pre-heated oven on 200 degree C for 10 mins.
  12. Sprinkle top with red chili and coriander leaves.
