Ingredients:
Butter (softened) 8 oz
Sugar 1 ½ cup
Eggs (beaten) 2
Egg Whites 2
Pineapple Essence ½ tsp
Flour (sieved) 2 2/3 cups
Baking Powder (sieved) 1 tsp
Pineapple (crushed & un-drained) 8 oz
For Glaze:
Icing Sugar 1 cup
Milk 2 tbsp
Pineapple Essence 2 drops
Method:
Beat butter & sugar in a bowl until its light and fluffy,
In another bowl beat eggs, egg whites, essence and sieved mixture beat well after each addition. Add this mixture to the butter mixture.
Stir in pineapples.
Pour it in a 10 inch flattened loaf pan and bake on 180 degree for 55 minutes. Cook it for 10 minutes before removing from the pan to wire rack.
For glaze:
Combine all the ingredients in a bowl and drizzle it over the cake.
