BIHARI PASANDAY
Ingredients:
Pasanday ½ kg
Yogurt ½ cup
Chopped onion 1
Lemons 2
Small cardamom 4
Big cardamom 4
Green chilies 4
Whole Red chilies 6
Black peppercorn 6
Mint leaves 1 bunch
Oil/ clarified butter ½ cup
White cumin 1 tsp
Black cumin 1 tsp
Coriander seeds 1 tbsp
Ginger garlic paste 1 tbsp
Papaya paste 2 tbsp
Black Chick peas 2 tbsp
Bihari masala ½ tbsp
Salt to taste
Method:
• Hammer ½ kg beef pasanday.
• Marinate it in ½ cup yogurt, 1 tbsp ginger garlic paste, 2 tbsp raw papaya paste and some salt.
• Roast and crush 1 tbsp coriander seeds,1 tsp black cumin, 1 tsp white cumin, 4 big cardamom, 4 small cardamom, 2 tbsp black chickpeas, 6 black peppercorn and 6 whole red chilies.
• Add the crushed spice on the beef pasanday and add in lemon juice, 1 bunch mint leaves, 4 green chilies and ½ tbsp bihari masala.
• Take ½ cup oil in the karahi and add in 1 chopped onion. fry it till they are golden brown.
• Cook the pasanday, when the water dries add in 1 tbsp oil/ clarified butter. Cook it for further 5-10 minutes. Serve.
