Ingredients
Mutton ½ kg
Sela Rice 300 grams
Onion 2
Green Chilies 2-3
Ginger Garlic Paste 2 tbsp
Bay Leaves 2-3
Cloves 4-5
Black Cardamom 3-4
Cinnamon 2-3 sticks
Black Cumin Seeds 1 tsp
Whole Black Pepper Corns 2 tsp
Sewa 1 bunch
Coriander ½ bunch
Clarified Butter ½ cup
Beated Yogurt as required
Salt to taste
Method
take a cooking pan add ½ cup of clarified butter add 2 onions fry in golden brown and set aside. Now on the same clarified butter add 2-3 bay leaves, 3-4 black cardamoms, 2-3 cinnamon sticks, 4-5 cloves and 1 tsp of black cumin seeds, when its popping up add ½ kg of mutton , 1 tbsp of ginger garlic paste and roasted and add as required water until its cook and tender when the mutton is tender so strain the stock and separately and discard all the spices. Now take a cooking pan add clarified butter add fried onions and 1 tbsp of ginger garlic paste , now add mutton and as required beated yogurt mix it well. Now add all the mixture into stock when its boiling add 300 grams of sela rice and steam it. when the steam is done add 1 bunch of sew, and ½ bunch of coriander mix it well take it out in a serving bowl and serve it. now shoal is ready.
