Aalu Palak Recipe by Shireen Anwar at Masala Mornings

Ingredients:

  • Spinach (washed& sliced)        ½ kg
  • Oil                                ¼ cup
  • Potatoes (4 quarters)            2 large
  • Garlic (crushed)                    1 tsp
  • Red Pepper (crushed)            1 tsp
  • Cumin                             ½ tsp
  • Whole Red Chilies                8
  • Cumin                            ¼ tsp
  • Crushed Red Pepper                 ½ tsp
  • Chilli Powder                    ¼ tsp

Method:

  1. Heat ¼ cup oil, add crushed garlic and fry till its slightly brown.
  2. Now add in chopped spinach with salt, crushed red pepper , cumin and whole red chilies
  3. Now cook spinach for 7-8 min, and remove the mixture.
  4. Use the same pan, add potatoes in it, add cumin ¼ tsp, crushed red pepper ½ tsp and ¾ cup water.
  5. Cover and cook till potatoes are tender.
  6. Now mix it cooked spinach mixture and cook for a while.
  7. Lastly add in chilly powder and serve
