Achari Kaddu Recipe
Ingredients

Finely Chopped Ginger Green Chilies Tomatoes Fenugreek Seeds Onion Seeds Fennel seeds Mustard Seeds Coriander Powder Cumin Powder Red Chili Powder Raw Mango Powder Turmeric Powder Olive Oil Salt Mint Leaves |
500 grams
1 tbsp 2-3 1 ½ tsp ½ tsp 1 tbsp ½ tsp ½ tsp ½ tsp 1 tbsp ¼ tsp ½ tsp 2-3 tbsp to taste for garnish |
Method
Take a cooking pan add 2-3 tbsp of oil add ½ tsp of fenugreek seeds , 1 tbsp of fennel seeds, ½ tsp of mustard seeds mix it well and stir fry, then add 1 tbsp of finely chopped ginger , 2-3 green chilies and fry add 500grams of pumpkin pieces , ½ tsp of onion seeds, ½ tsp of coriander powder, ½ tsp of cumin powder, 1 tbsp red chili powder, ¼ tsp raw mango powder , ½ tsp turmeric powder and add to taste salt mix it well. Now cover the cooking pan and cook 4-5 minutes in a low flame and add some water and again cover it. Now add 1 tomato mix it well and cook in a high flame till the pumpkin its tender. At last take it out in a serving bowl and garnish with mint leaves and serve it.
