Achari Kaleji by Gulzar Hussain

Ingredients:

  • Beef Livers 1 kg
  • Yogurt ½ kg
  • Onion 1
  • Big Green Chilies 8-10
  • Crushed Red Chilies 2 tbsp
  • Finely Chopped Ginger 1 tbsp
  • Finely Chopped Garlic 1 tbsp
  • Fennel Seeds 1 tsp
  • Cumin Seeds 1 tsp
  • Onion Seeds ½ tsp
  • Mustard Seeds ½ tsp
  • Fenugreek Seeds ¼ tsp
  • Red Chili Powder 1 tbsp
  • Raw Mango Powder 1 tbsp
  • Cumin Powder 1 tsp
  • Salt to taste
  • Oil 4 tbsp

 

Method:

  1. Take a some yogurt add 1 tbsp of red chili powder, 1 tbsp of raw mango powder, 1 tsp of cumin seeds, add to taste salt mix it well.
  2. Take 8-10 green chilies cut into the middle and fill the spices mixture and set aside.
  3. Take a cooking pan add 1 tbsp of finely chopped ginger, 1 tbsp of finely chopped garlic, 1 finely chopped onion, fry for 2-3 minutes.
  4. Then add 1 kg of beef livers and roasted then add water to tender the livers.
  5. Now take a mixing bowl add rest of the yogurt add 2tbsp of crushed red chilies, 1 tsp of fennel seeds, , 1tsp of cumin seeds, ½ tsp of onion seeds, ½ tsp of mustard seed, ¼ tsp of fenugreek seeds, and add to taste salt mix it well and roasted.
  6. Now add as required water and add big green chilies and cover it to the lid and steam it.
  7. when the steam is done take it out in a serving dish and serve it.
