Aloo ki Kachorian

Ingredients:

  • Boiled Potatoes                ½ kg
  • Red chili flakes  1 tbsp
  • Crushed black pepper    1 tsp
  • Mustard powder              1 tbsp
  • Roasted and crushed cumin        1 tsp
  • Lemons                2
  • Chopped green chilies   4
  • Chopped green coriander            1 bunch
  • Salt         to taste
  • Oil           to fry
  • Flour      ½ kg
  • For Dough:
  • Jaggery water    2 tbsp
  • Carom seeds      ½ tsp
  • Salt         to taste
  • Soda bi carbonate            1 tsp

Method:

  1. To make dough, take ½ kg flour, jiggery water, salt and ½ tsp carom seeds, 1 tsp soda bi carbpnate.
  2. Mix everything together and make a dough.
  3. Keep it for some time to rise.
  4. Peel the potatoes and mash them.
  5. Add in 2 lemon juice and 1 tbs red chili flakes, 1 tsp crushed black pepper
  6. Add some salt, 1 tbsp mustard powder, 1 tsp roasted and crushed cumin and green chilies. Mix them well.
  7. Take some oil in the pan.
  8. Take the dough and spread it, add in the mixture and fold it and deep fry them.
  9. Till they are golden brown.
  10. When the kachoris are golden brown serve them with tamarind chutney and green chili chutney and yogurt.
