Ingredients:
- Egg Plants (small) 250 gm
- Tomatoes 250 gm
- Ginger Garlic Paste 2tbsp
- Whole Red Chilies 2-3
- Red Chilli Flakes 1 tsp
- Crushed Cumin 1 tsp
- Crushed Coriander 1 tsp
- Ginger Julian 1 tbsp
- Soup Stock 10 gm
- Oil ¼ cup
- Green Chillies 2
Method:
- Slit baingan, dip in salted water for 10 min, then remove
- Heat Oil, fry bangan for 3-4 minutes
- Then remove, in the same oil fry ginger garlic then add chopped tomatoes
- Add whole and crushed chili, cumin seed and coriander
- Add soup stock and fried baingan
- Lastly add green chilies, ginger Julian, put on dum for 5 minutes
