Baingan Karahi

Ingredients: 

  • Egg Plants (small)                                       250 gm
  • Tomatoes                                                     250 gm
  • Ginger Garlic Paste                                                2tbsp
  • Whole Red Chilies                                      2-3
  • Red Chilli Flakes                                          1 tsp
  • Crushed Cumin                                           1 tsp
  • Crushed Coriander                                                1 tsp
  • Ginger Julian                                             1 tbsp
  • Soup Stock                                                10 gm
  • Oil                                                               ¼ cup
  • Green Chillies                                              2

Method:

  1. Slit baingan, dip in salted water for 10 min, then remove
  2. Heat Oil, fry bangan for 3-4 minutes
  3. Then remove, in the same oil fry ginger garlic then add chopped tomatoes
  4. Add whole and crushed chili, cumin seed and coriander
  5. Add soup stock and fried baingan
  6. Lastly add green chilies, ginger Julian, put on dum for 5 minutes
