Bathuay kay Parathay

Ingredients:

  • Wheat flour                                                        1 kg
  • Chenopodium leaves                                     1-1/2 kg
  • White cumin whole                                         1-1/2 tsp
  • Red chili powder                                              1 tsp
  • Garlic chutney                                                   3 tbsp
  • Salt                                                                         to taste
  • Oil or clarified butter                                      for fry
  • Water                                                                   1-1/2 cup
  • For garlic chutney:
  • Garlic cloves                                                       8-10
  • Button red chili                                                                 15
  • White cumin                                                      1-1/2 tsp
  • Salt                                                                         to taste
  • Ingredients for Chenopodium raita:
  • Yogurt                                                                   1 grams
  • Chenopodium leaves paste                         ½ cup
  • Garlic chutney                                                   2 tbsp
  • Salt                                                                         to taste
  • White cumin                                                      1 tsp
  • Oil                                                                           2 tbsp

Method:

  1. Chenopodium leaves cut and wash then 1-1/2 cup water add and boil .
  2. Then boil Chenopodium pour in blender then blend it .then in flour salt.
  3. Add cumin ,red chilies and garlic chatni mix then blended flour Chenopodium  knead.
  4. Then make balls and roll it and fry .
  5. For chatni in a pan around 1 cup of water and whole button chilies soaked.
  6. When chilies soft then all ingredients and water add and blend.
  7. For Chenopodiumriata yougrt beat  then add salt ,garlic ,chatni and Chenopodium paste mix well.
  8. Then ina fry pan heat oil and add cumin when golden then tempering in raita .
