Bengan Bhujiya By Shireen Anwar

Ingredients:

  • Eggplant (sliced) half kg
  • Oil ¼ cup
  • Chopped onion half cup
  • Garlic chopped 1 tsp
  • Cumin seeds 1 tsp
  • Mustard seeds 1 tsp
  • Turmeric 1/4 tsp
  • Curry leaves 1 stick
  • Green chilies 4 – 5
  • Tomatoes 2 choperized
  • Salt 1 tsp
  • Chili powder 1 tsp
  • Coriander leaves 2 tbsp

 

Method:

  1. Heat oil in a pan add chopped onion with chopped garlic cumin seeds mustard seeds curry leaves, chopped green chilies, when onion golden, add chopped tomatoes, salt, chili powder 1 tsp , turmeric ¼ tsp fry well lastly add bengan, sliced with half cup water cover and cook for dum.
  2. Lastly add coriander leaves serve with Naan.
