Bengan ka Raita

Ingredients:

  • Brinjal 4
  • Fresh Milk 1 cup
  • Yogurt  3 cups
  • Sugar 1 tsp
  • Corn Flour 1 tbsp
  • Red Chilies 1 tbsp
  • Ginger Garlic Paste 1 tbsp
  • Salt  to taste
  • INGREDIENTS FOT BHAGAR:
  • Oil 1 cup
  • Whole Red Chilies 6
  • Curry leaves few
  • Dry Fenugreek Leaves 4-5
  • Cumin 1 tsp

Method:

  1. Beat 2 cups yogurt, 1 tbsp corn flour, 1 tsp sugar and 1 cup fresh milk and mix it properly.
  2. Now put 4 brinjals in a pan and deep fry them in heated oil and make them golden brown and then spread them.
  3. Now take a pan and heat ½ cup oil and add 1 tbsp ginger garlic paste
  4. Add 1 tbsp red chilies and salt to taste and cook it and add the fried bringals in it.
  5. In a dish add yogurt and then a layer of masala mixed brinjals and then again a layer of yogurt.
  6. In the end, heat 1 cup oil and add 1 tsp cumin
  7. Add 6 whole red chilies, few curry leaves and 4-5 dry fenugreek leaves and fry them and prepare the bhagar and put it on the raita.
