Ingredients:
- Boneless chicken ½ kg
- Fresh cream ½ cup
- Salt 1 tsp
- Lemon juice 2 tbsp
- Button red chilies 8 roasted and grinded
- Roasted gram 2 tbsp grinded
- Roasted and crushed cumin 1½ tsp
- Black cumin seeds 1 tsp
- Coriander seeds roasted and grinded 1 tsp
- Green cardamom 4 grinded
- Black cardamom 2 grinded
- Green chilies chopped 4
- Oil ¼ cup
- Onion rings to serve
- Mint leaves to serve
- Mayo garlic chatni to serve
- Ingredients for Paratha
- Maida 2 cups
- Wheat flour 1 cup
- Salt ½ tsp
- Sugar 1 tbsp
- Egg 1
- Ghee ¼ cup
- Warm water to knead
- Baking powder ½ tsp
Method:
- FOR PARATHA
- Mix all the ingredients together, knead to medium consistency dough
- Leave it covered for 30 mins, make into balls, then roll and shallow fry
- Fill with filling, chatni, roll in butter paper and serve paper.
- METHOD
- Roast together batten red chilies, white cumin seeds, black cumin seeds
- Add coriander seeds, black cardamom, green cardamom and grind all together with roasted gram.
- Marinate chicken with all this; salt, lemon juice
- Add cream and leave it for 30 mins.
- Pan fry in ¼ cup oil until tender and dry
- Now give dum of coal and make parathas.
