Bihari Chicken Malai Roll

Ingredients:

 

  • Boneless chicken ½ kg
  • Fresh cream ½ cup
  • Salt 1 tsp
  • Lemon juice 2 tbsp
  • Button red chilies 8 roasted and grinded
  • Roasted gram 2 tbsp grinded
  • Roasted and crushed cumin 1½ tsp
  • Black cumin seeds 1 tsp
  • Coriander seeds roasted and grinded 1 tsp
  • Green cardamom 4 grinded
  • Black cardamom 2 grinded
  • Green chilies chopped 4
  • Oil ¼ cup
  • Onion rings to serve
  • Mint leaves to serve
  • Mayo garlic chatni to serve
  • Ingredients for Paratha
  • Maida 2 cups
  • Wheat flour 1 cup
  • Salt ½ tsp
  • Sugar 1 tbsp
  • Egg 1
  • Ghee ¼ cup
  • Warm water to knead
  • Baking powder ½ tsp

 

Method:

  1. FOR PARATHA
  2. Mix all the ingredients together, knead to medium consistency dough
  3. Leave it covered for 30 mins, make into balls, then roll and shallow fry
  4. Fill with filling, chatni, roll in butter paper and serve paper.
  5. METHOD
  6. Roast together batten red chilies, white cumin seeds, black cumin seeds
  7. Add coriander seeds, black cardamom, green cardamom and grind all together with roasted gram.
  8. Marinate chicken with all this; salt, lemon juice
  9. Add cream and leave it for 30 mins.
  10. Pan fry in ¼ cup oil until tender and dry
  11. Now give dum of coal and make parathas.
