Blueberry Cupcakes By Shireen Anwar

Ingredients:

  • Butter 6 oz
  • Sugar 6 oz
  • Eggs 3
  • self raising flour 6 oz
  • Milk 1/4 cup
  • Blue berry essence half tsp

 

Ingredients for icing:

  • Whipped cream 1 ½ cup
  • Blueberry sauce or syrup 2 – 3 tbsp

 

Method:

  1. Beat butter and sugar till light and creamy.
  2. Start adding in 1 egg at a time alternating with flour.
  3. Fold in essence and milk spread in paper cases, kept in muffin tray.
  4. Bake for 15 mins on 180 Degrees, remove cool decorate with whipped cream, blue berry sauce or syrup.
