Chicken Chutney Rice By Zubaida Tariq

Ingredients:

  • Rice                                              2 cups
  • Boneless Chicken                           ½ kg
  • Spring Onion Leaves (chopped) 1 cup
  • Lemons                                       2
  • Cayenne                                                    4
  • Cumin Seeds                              1 tsp
  • Ginger Garlic Paste                  1 tbsp
  • Coriander Seeds                               1 tbsp
  • Oil                                                3 tbsp

 

Method:

  1. Wash and soak rice, remove the water and boil rice in fresh water. Leave it to simmer
  2. Boil  cayenne with vinegar and little water.
  3. Grind boiled cayenne with cumin and coriander seeds. Make a  fine chutney.
  4. In a wok add oil, ginger garlic paste and fry , now add chicken with chutney and fry well
  5. When oil starts appearing on the surface, mix in rice and stir well. Add lemon juice.
  6. Garnish with green chilies, coriander leaves and serve
