Chicken Stuffed Potatoes by Shireen Anwar at Masala Mornings

 

Ingredients:

  • Unpeeled Potatoes (boiled)            ½ kg
  • Chicken Breast (julienned)            2
  • Cream            1 packet
  • Milk            ½ cup
  • Salt            ¼ tsp
  • Red Peppper (crushed)            ½ tsp heaped
  •  Oil            1 tbsp
  • Garlic            1 tsp
  • Onions            1 tbsp heaped
  • Chicken Powder            1 tsp heaped
  • Parsely (chopped)/Coriander leaves    1 tbsp
  • Mushroom (sliced)            4

Method:

  1. Boil potatoes with it’s skin, scoop out a chunk from top and bottom, leaving hollow space in each potato.
  2. Heat oil, add chopped onions, sauté.
  3. Now add garlic with chicken, mushrooms, cream, milk and rest of the seasonings Fry well and cook till mixture thickens.
  4. Remove the chicken sauce and pour it in the hollow potatoes.
  5. Garnish with chopped parsley and serve
