Chinioti Biryani Recipe by Shireen Anwar

Ingredients:

  • Chicken 1kg
  • Rice 750 grams boiled with salt half done
  • Oil ¾ cup
  • Brown onion crushed ½ cup
  • Chili powder 1 tbsp
  • Yoghurt 1 cup
  • Whole green chilies 8
  • Cloves 6
  • Whole green cardamom 6
  • Salt 1 ½ tsp
  • Allspice 1 ½ tsp
  • Aalu Bukhara 10
  • Water 2 – 3 cups
  • Kewra water 1 ½ tsp
  • Green cardamom grinded ½ tsp
  • Maze quarter tsp grinded
  • Nutmeg quarter tsp grinded
  • Yellow color few drops

 

Method for rice:

  1. Boil water with 2 tbsp salt, add rice cook till half done.
  2. Strain rice.
  3. Keep aside.

 

Method:

  1. Heat oil adds brown onion, Yoghurt, mutton, cloves, green cardamom whole, green chilies, chili powder and salt.
  2. Cook meat cover for 25 min with 2 cups water.
  3. When water dries, fry meat add alu Bukhara, grinded cardamom, maze and nutmeg, cook on medium flame till mutton tender, lastly add allspice and kewra.
  4. In a pan put meat mixture, top with boil rice, pour yellow color.
  5. Put on Dum for 15 min.
