Coconut Soup Recipe

Coconut Soup
Ingredients:
Chicken (Skinless) ¼ cup
Vegetable oil 3 tbsp
Coconut milk 1 cup
Water 2 cups
Fresh ginger (Minced) 2 tbsp
Fish sauce 4 tbsp
Fresh lime juice ¼ cup
Chili powder ¼ tsp
Turmeric (Ground) ½ tsp
Green onion (Thinly sliced) 2 tbsp
Cilantro (Chopped) 1 tbsp

Method
Cut chicken into thin strips and sauté in oil for to 2 to 3 minutes until the chicken turns white.
In a pot, bring coconut milk and water to a boil.
Reduce heat. Add ginger, fish sauce, lime juice, chili powder and turmeric.
Simmer until the chicken is done, approximately 10 to 15 minutes.
Sprinkle with green onions and fresh cilantro.
Serve hot.
