Ingredients:
- Butter 6 tbsp
- Light Brown Sugar ½ cup
- Cream Cheese 3 oz
- Caster Sugar 4 tbsp
- Vanilla Essence 2 tsp
- Baking Soda ¼ tsp
- Salt ¼ tsp
- Flour 1- ¼ cups
- Chocolate Chips ¾ cups
- Milk Chocolate (chopped) ¾ cups
Method:
- Beat together the butter and brown sugar
- Add in the cream cheese and the caster sugar.
- Beat in the vanilla, baking soda, salt, and flour until a dough is formed.
- If it is too wet add in a little more flour until it pulls away from the sides when beating.
- Stir in ¾ cup of chocolate chips. Roll the cookie dough into small balls and set aside.
- Line a mini muffin tin with mini lining cups.
- Spoon a little amount of the melted milk chocolate into the bottom of each of the muffin cups.
- Place the slightly flattened balls of cookie dough on top of the melted chocolate mixture.
- Leave cups as they are and let set
- Serve or pour a little amount of more melted chocolate over all of the cookie dough balls.
- Chill in the fridge for at least 30 minutes.
- Store in an airtight container.
