Creamy Corn with Mixed Vegetables Food Diaries by Zarnak Sidhwa

Ingredients:
Cream style corn 1 tin
Mixed vegetables (carrots, peas, cabbage, cauliflower) 4 oz
Tomato paste 2 tbsp
Finely chopped onion 1
Finely crushed fresh ginger 1 tsp
Finely crushed fresh garlic 1 tsp
Whole black peppercorns 3
Whole cumin seeds 1 tsp
Oil 1 tbsp
Salt 1 tsp
Chopped coriander leaves a few

Method:
Heat  oil, add cumin seeds and black peppercorns. Add ginger and garlic after the cumin seeds turn brown. Next, add the chopped onions and fry till they turn golden brown. Then add the tomato paste and after a few seconds add the mixed vegetables and about 2-4 tbsp water. Cover and cook till the vegetables are half done. Lastly add the cream style corn and salt and serve garnished with coriander leaves chopped.
