CREAMY TOMATO BASIL SOUP

Ingredients:

  • Tomatoes 1 kg boil with 2 cups water
  • Tomato puree 2 tbsp
  • Crushed garlic 1 tbsp
  • Ketchup 3 tbsp
  • Stock 2 cups
  • Sugar 1 tbsp
  • Salt 1 tsp
  • Black pepper ½ tsp
  • Butter 2 ounce
  • Basil leaves chopped 15
  • Cream ½ cup
  • Milk ½ cup
  • Corn flour 2 tbsp

Method:

  1. Boil tomatoes in 2 cups water remove, peal and puree.
  2. Heat butter, add garlic and basil leaves sauté for 1 min, add tomato puree cook for 2 mins, add stock with all the seasonings. Lastly thicken with corn flour, add cream and basil.
