Curried Egg Potato Salad
Ingredients :
Eggs( boiled and peeled) 6
Potatoes( peeled boiled and cubed) 2
Curry Powder 1 tsp
Iceberg Lettuce 1
Lettuce Leaves 1
Mayonnaise 4 tbsp
Chili Sauce 1½ tbsp
Mustard Sauce 1 tsp
Method :
Drain and tear the iceberg and lettuce leaves and put into a bowl. Add 2 tbsps mayonnaise and mix. Transfer them into a serving bowl. Quarter the eggs and keeping aside 2-3 pieces for garnish, put the rest in the bowl. Mix 2 tbsps mayonnaise, chilli sauce, mustard sauce, curry powder in a another bowl and add it to the egg-potato mixture. Put this salad over the lettuce, garnish with the reserved egg slices.
