Egg salad by Zarnak Sidhwa in Food Diaries

Ing :
6 hard boiled eggs, roughly chopped
2 finely chopped spring onions
1 small capsicum, chopped
1 tbsp cream
1 jalapeƱo chopped
2 green chillies, finely chopped
6 black olives, chopped
salt and pepper to taste
1/2 tsp mustard paste
salt and pepper to taste
mayonnaise
1/2 tsp vinegar or lemon juice.
1/4 cup finely chopped celery

Method :
Mix mayonnaise, cream, salt, pepper, mustard and vinegar or lemon juice till well blended. Add the roughly chopped eggs and all the rest of the ingredients. Mix well and serve with soft dinner rolls. This is also excellent as a sandwich filling with shredded lettuce. Also as a starter, served on lettuce shreds in individual serving glasses.
