Finger Fish with Turtle Sauce By Chef Gulzar

Ingredients:

  • Boneless Fish                                                   500 grams
  • Egg Whites                                                       2
  • Ginger Garlic Paste                                        1 tbsp
  • Red Chili Powder                                           1 tbsp
  • Turmeric Powder                                           ½ tsp
  • Garam Masala Powder                                ½ tsp
  • Corn Flour                                                        2 tbsp
  • Orange Food Color                                        a pinch
  • Oil                                                                       for frying
  • Salt                                                                     to taste

Mayonnaise:

  • Eggs                              2
  • Vinegar                       3 tbsp
  • Sugar                           2 tbsp
  • Oil                                 300 gm
  • Salt                               to taste
  • For Turtle Sauce
  • Mayonnaise                                           1 cup
  • Mustard Paste                                       2 tbsp
  • Carrots (finely chopped)                    1 tbsp
  • Capsicum (finely chopped)               1 tbsp
  • Black Pepper (Crushed)                      ½ tsp
  • Salt                                                            to taste

Method:

  1. For mayonnaise add eggs, vinegar,  salt and sugar in a blender and blend well, gradually add oil in between and blend till it becomes thick and creamy
  2. For Sauce:
  3. Mix all together.

For Fish:

  1. Marinate fish in a mixture if all the ingredients for half an hour.
  2. Heat oil in a wok and fry , remove it on a kitchen towel and serve with turtle sauce
