Fried Chicken Dum Biryani

Ingredients:

  • Chicken (small pieces)   ½ kg
  • Ginger garlic paste           1 tbsp
  • Red chili powder              1 tsp
  • Turmeric                              ¼ tsp
  • Salt                                         to taste
  • Gram flour                          2 tbsp
  • Flour                                      1 tbsp
  • All spice powder               1 tsp
  • Yogurt                                   4 tbsp
  • Oil                                           for frying
  • Ingredients for gravy:
  • Onion (finely cut)             2
  • Clarified butter                 ½ cup
  • Ginger garlic paste           2 tbsp
  • Yogurt                                   ¾ cup
  • Rose water                         2 tbsp
  • Almond powder               1 tbsp
  • Turmeric                              ¼ tsp
  • Mix all spice                        1 tbsp
  • Salt                                         to taste
  • Red chili powder              1 tbsp
  • Green chilies                      6-8
  • Tomatoes (boiled & cut) 1 cup
  • Lemon juice                       2 tbsp
  • Ingredients for rice:
  • Rice                                        ½ kg
  • Mix all spice                        1 tbsp
  • Salt                                         to taste
  • Yellow food color             as required
  • Milk                                       4 tbsp
  • Oil                                           4 tbsp
  • Ingredients for garnish:
  • Fry onion                             as required
  • Cashew nuts                      as required
  • Raisins                                  as required
  • Boiled eggs                         as required

Method:

  1. Put all ingredients on chicken and leave overnight.
  2. Now fry chicken on low flame until it gets tender.
  3. For gravy heat clarified butter and fry onion in it.
  4. Then add whole all spice, salt, chili, turmeric, tomato, and yogurt and saute well.
  5. Now add almonds and ½ cup water and cook for 5 minutes.
  6. Then add rose water, lemon juice and green chilies.
  7. For rice heat water and add soaked rice in it with salt and whole all spice and boil till one thread left.
  8. Now strain water from rice.
  9. Now put gravy in large pan then add fry chicken over it.
  10. Then add all rice and oil over it.
  11. Then mix 2 pinch yellow food color in milk and put it on dum.
  12. Now take out in dish and garnish with fry onion, raisins, cashew nuts and boiled eggs.
