Ingredients:
- Eggs 4
- Sugar 4 oz
- Flour 4 oz
- Baking Powder 1 tsp
- Vanilla 1 tsp
- Pineapple (sliced) as required
- Ingredients for icing and filling:
- Fruit cocktail 1 tin
- Cherries 12
- Fresh cream (whipped) 12 oz
Method:
- Beat eggs with sugar, till double in volume add essence; fold in sieved flour and baking powder mixture.
- Bake in greased 2×8 inches round pan, for 25 min on 180 Degrees.
- Remove and cool.
- Beat cream stiff, add caster sugar, soak the layer of the cake with fruit cocktail syrup, apply whipped cream, put second lyre of cake, brush with syrup apply cream on side and top, put pineapple wedges all around corner of cake, then cherries, in the left over portion fill with fruit cocktail.
- Cake should be fully covered with fruit.
