Hot and Sour Noodles
Ingredients:
Spaghetti (Boiled) 1 pkt
Oil 2 tbsp
Chicken (Boneless, skinless) 1 cup
Ginger (Finely minced) 1 tbsp
Garlic (Finely minced) 1 ½ tsp
Red Chili (Finely chopped) 1 tsp
Salt ½ tsp
Capsicum (Thinly sliced) 1
Sugar 1 tbsp
Soy Sauce ¼ cup
Sesame Oil 2 tbsp
Vinegar 2 tbsp
Peanuts (Chopped, unsalted, roasted) ½ cup
Red Pepper Flakes ½ tsp
Method:
In a large nonstick skillet or wok, heat the oil over medium-high heat. Add chicken, 2/3 of the ginger, 2/3 of the garlic, and salt.
Sauté until chicken is no longer pink in the center, about 4 minutes. Remove to a plate and set aside.
To the skillet, add the vegetables, remaining 1/3 ginger and 1/3 garlic, and sauté until the vegetables are hot and the cabbage is slightly tender.
Add the stock, soy sauce, sesame oil, and vinegar. Cook 2 minutes.
Add the reserved spaghetti, reserved chicken, peanuts and pepper flakes to pan.
Toss gently to combine, then serve warm, topped with additional roasted peanuts as desired.
