HOT AND SOUR STIR FRY FISH BY SHIREEN ANWAR

Ingredients:

  • Boneless fish cubes ½ kg
  • Corn flour ½ tsp
  • Egg white 1
  • Oil 1 tbsp
  • Salt ½ tsp
  • Black pepper ½ tsp
  • Oil to fry
  • INGREDIENTS for Stir Frying
  • Chopped garlic 1 tbsp
  • Chopped onion ½ cup
  • Spring Onions ½ cup
  • Crushed red pepper
  • Oil ¼ cup
  • INGREDIENTS for Sauce
  • Samba oleak 2 tbsp
  • Soya Sauce 1 tbsp
  • Sweet chili sauce ½ cup
  • Chicken stock ½ cup
  • Vinegar ¼ cup
  • Brown sugar 2 tbsp

Method:

  1. Marinate fish with salt, black pepper, egg white, corn flour and oil for 30mins shallow fry fish keep aside.
  2. Method for Sauce
  3. Mix Samba oleak oleak, soya sauce, brown sugar, vinegar, sweet chili sauce and stock, heat oil in a pan, add chopped garlic, spring onions crushed red pepper prepare sauce, cook till thick, add fish with spring onions on top.
