Jasmine rice
Ingredients
350g jasmine rice, rinsed until the water runs clear
800ml boiling water
2 spring onions, chopped
1 small coriander, roughly chopped
1tbsp light soy sauce
1 tbsp oil
method
Place the rice into a heavy-based saucepan and add the boiling water. Bring to the boil, then drain the water. and the rice is cooked al dente.
Fluff up the rice grains with a fork, stir fry in wok with remaining ingredients and toss two minutes and serve immediately.
