Maqlooba Recipe

Ingredients:

  • Chicken (with bone)       600 gm
  • Onion    chopped              2
  • Ginger garlic chopped    1-1/2 tbsp
  • Chopped brinjal slice      2-3
  • Chopped tomato slice    2-3
  • Boiled potato slice           2-3
  • Cauliflower florets           1 cup
  • Oil                                           ¾ cup
  • Yogurt                                   4 tbsp
  • Tomato puree                   1 tbsp
  • Ingredients for rice:
  • Boiled rice                           ½ kg
  • Mix garam masala            1 tbsp
  • Salt                                         to taste
  • Black pepper                      to taste
  • Oil                                           4 tbsp
  • Crushed ginger garlic      1 tbsp
  • Olive oil                                4 tbsp
  • Chicken cube                     1

Method:

  1. Apply yogurt on chicken pieces.
  2. Fry cauliflower florets.
  3. Add tomato purees, salt and black pepper cook.
  4. Fry brinjal and potato slices.
  5. Heat remaining oil adds crushed ginger and garlic fry.
  6. Also add onion fry well.
  7. Add tomato, salt and black pepper cook well.
  8. Heat oil for rice adds chopped ginger, whole spices, tomato puree fry.
  9. Add 1 cup of water and chicken cube cook till boil come.
  10. After that mix rice and simmer.
  11. Heat oil add chicken and vegetable layer.
  12. Add cook rice simmer for 5 min. dish out in a serving mould.
