Ingredients:
- Bitter Gourd ½ kg
- Onion (Finely chopped) 4
- Red Chilies (Crushed) 1 tbsp
- Turmeric 1 tsp
- Ginger Garlic Paste 1 tbsp
- Cloves 1 tsp
- Coriander Powder 2 tbsp
- Fennel Seeds 1 tsp
- Salt To taste
- Tamarind Pulp ½ cup
- Brown Sugar 1 tbsp
- Curry Leaves A few
- Salt To taste
- Tomato Paste 2 tbsp
- Vegetable Oil 1 cup
- Ingredients to Wash Bitter Gourd:
- Turmeric 1 tsp
- Tamarind Juice 1 tbsp
- Salt 1 tsp
- Brown Sugar 1 tsp
Method:
- First peel the bitter gourds and make slits in them.
- Now without washing them, mix turmeric, tamarind juice, salt, brown sugar and set aside.
- Wash after 10 minutes and the bitterness will be removed from the bitter gourds.
- Now in a pot, heat the vegetable oil and fry finely chopped onions until they turn pink.
- To this add ginger garlic paste, crushed red chilies, turmeric, coriander powder, fennel seeds, salt ad mix everything together.
- After this, fill a little of the prepared spice mixture into the bitter gourds and tie them with a string.
- Now heat oil in a frying pan and fry the spice-filled bitter gourds.
- To the remaining onions, add the tomato paste, tamarind pulp, brown sugar and leave the fried bitter gourds to simmer.
