Masala vegetable Toast By Zarnak Sidhwa in Food Diaries

Ingredients:

  • 1 tbsp Oil
  • 1 Onion Chopped
  • 2 Green Chilies Chopped
  • 1 Capsicum Chopped
  • 1 Carrot Grated
  • Salt         to taste
  • ½ tsp Red Chili Powder
  •  1 Pinch  Turmeric Powder
  • 1 tbsp Ketchup
  • Half  Lemon  Lemon Juice
  • 1 tbsp Chopped Coriander Leaves
  • 6 Slices Brown Bread
  • Ketchup or Chili Sauce     as required
  • Butter or Clarified Butter     to fry

Method:

  1. Heat a tbsp of oil.
  2. Add the chopped onion and chopped green chili and saute.
  3. Add capsicum and carrot and saute.
  4. Add salt, red chili powder  and turmeric.Mix well.
  5. Add ketchup, lemon juice and chopped coriander leaves and mix.
  6. Turn of heat and remove onto a plate.
  7. Toast bread on one side, spread some chilli sauce or ketchup, spoon some of the vegetable masala all over and toast the other side of the bread in a few drops of ghee or butter.
