Ingredients:
- Egg Plant ½ kg
- Cumin (crushed) 1 tbsp
- Coriander (crushed) 2 tbsp
- Red Pepper (crushed) 1 tbsp
- Turmeric 1 tsp
- Ginger Garlic Paste 1 tbsp
- Salt to taste
- Tamarind Pulp 2 tbsp
- Curry leaves few
- Green Chilies 6
- Mustard Oil 1 cup
- Almonds (finely chopped) 10
- Fenugreek Seeds few
- Nigella Seeds 1 tsp
Method:
- Firstly small Egg Plant wash and cut mark
- Now heat oil and fry egg plant and remove then in oil ginger garlic paste
- Crushed red chili ,crushed white cumin ,crushed coriander
- Add turmeric ,salt ,curry leaves ,fenugreek and green chili lightly roast.
- After this fried eggplant, Nigella Seeds
- Now fine cut almonds and Tamarind Pulp add and leave on low heat after this.
- Delicious masalay dar eggplant ready.
