Masalaydar Baingan

Ingredients:

  • Egg Plant                                     ½ kg
  • Cumin (crushed)                        1 tbsp
  • Coriander (crushed)                 2 tbsp
  • Red Pepper (crushed)              1 tbsp
  • Turmeric                                     1 tsp
  • Ginger Garlic Paste             1 tbsp
  • Salt                                               to taste
  • Tamarind Pulp                           2 tbsp
  • Curry leaves                               few
  • Green Chilies                              6
  • Mustard Oil                                1 cup
  • Almonds (finely chopped) 10
  • Fenugreek Seeds                       few
  • Nigella Seeds                              1 tsp

Method:

  1. Firstly small Egg Plant wash and cut mark
  2. Now heat oil and fry egg plant and remove then in oil ginger garlic paste
  3. Crushed red chili ,crushed white cumin ,crushed coriander
  4. Add turmeric ,salt ,curry leaves ,fenugreek and green chili lightly roast.
  5. After this fried eggplant, Nigella Seeds
  6. Now fine cut almonds and Tamarind Pulp add and leave on low heat after this.
  7. Delicious masalay dar eggplant ready.
