Mexican salad
Ing :
Corn 1/4 cup
Red kidney beans boiled 1 cup
Onions 2 sliced
fresh red chilli 1 chopped
capsicum 1 sliced
salt to taste
2 tbsp coriander leaves chopped
Hot sauce 1 tablespoon
Iceberg lettuce 5-6
Lemon 1/2
Tortilla chips a handful
Method :
Place red kidney beans in a large bowl. Add corn, onions, red chilli, capsicum and salt. Add the chopped coriander leaves and hot sauce. Tear iceberg leaves and add. Squeeze lemon and add the juice. Crush corn chips and add. Toss and serve immediately.
