Mexican shrimps Pasta salad
Ingredients:
1 packet ridged pasta ( boiled)
10-12 shrimps ( peeled and deveined)
2-3 tbsp lemon juice
1/2 cup onion (chopped)
1/4 cup cucumber (diced)
1 cup tomatoes (chopped)
2-3 green chilies chopped
2 tbsp cilantro leaves
1/2 tsp salt
2 tbsp olive oil
Method:
Add 4-5 cups of water in a large sauce pan over high flame, and bring it to a boil, now add shrimps and immediately turn off the flame. Leave them until they are cooked thoroughly and drain out.
Chop the shrimp into 1/2-inch pieces. Place them in a bowl; add pasta, lemon juice, cucumber, onion and green chilies and tomatoes.
Stir in chopped cilantro, oil and 1/2 teaspoon salt into the shrimp mixture. Let stand at room temperature for 30 minutes before serving. Garnish with cilantro leaves, if desired.
