Mexican Spicy Fish

Mexican Spicy Fish

Ingredients:

Non oily white Fish Steaks 1kg
Corn oil ½ cup
Large onion thinly sliced 1
Garlic 2 Cloves,
Medium sized tomatoes, chopped 4
Drained canned jalapeno chilies, rinsed and sliced 5

For Marinating:

1) Garlic 4 cloves
2) black pepper 1tsp
3) Oregano ½ tsp
4) ground cumin ½ tsp
5) ground cinnamon ½ tsp
6) mild vinegar 3 tbsp
7) salt 1tsp

Method:

1) Arrange Fish steaks in a single layer in a shallow dish. Mix all the Marinade ingredients together. Spread the marinade on each side of the fish steaks. Cover and leave in a cool place for an hour
2) Select a flat-based pan large enough to hold the fish in a single layer. Pour enough oil to coat the bottom. Now pour the marinade on top of the fish steaks
3) Top the fish with onion, garlic, tomatoes and chilies and pour the rest of the oil over the top
4) Cover the pan and cook over low heat for 15 minutes or till the fish is no more translucent
5) Garnish with parsley and serve at once
