Mont Pestoo Rice

Ingredients:

  • Rice 2-1/2 cup
  • Oil ¼ cup
  • Onion (sliced) 1
  • Tomato (sliced) 1
  • Garlic (chopped) ½ tsp
  • Salt 1 tsp
  • Stock 3-1/2 cup
  • Whole Cumin Seeds 1 tsp
  • Cinnamon 1 piece
  • Star Anise 1
  • Bay Leaf 1
  • Cloves 2-3
  • Mont Pestoo Sauce:
  • Mint Leaves 1 cup
  • Garlic Cloves 2
  • Lemon Juice 2 tbsp
  • Salt ½ tsp
  • Green Chili 3-4
  • Lemon Zest ½ tsp

Method:

  1.  For sauce:
  2.  In a blender, add all the ingredients mix and make paste.
  3.  Now in a pan, heat oil add all the whole spices , onion and fry.
  4. When change the color, add tomatoes, salt, sauce and fry well.
  5. Then add stock and boil comes add rice and cook.
  6. When dries the water and let it simmer.
