Moti Pilao Recipe By Chef Gulzar

Ingredients:

For Moti:

  • Chicken mince (finely) 750gm
  • Red Chili Powder 1 tbsp
  • Onion 1
  • Ginger Garlic Paste 1 tbsp
  • Turmeric Powder 1 tbsp
  • Garam Masala Powder 1 tbsp
  • Silver to decorate
  • Green Chili 4-5
  • Salt to taste

 

For Rice:

  • Rice ½ kg
  • Ginger Garlic Paste 1 tbsp
  • Onion 2
  • Chicken Cube 2
  • Cumin seeds 1 tbsp
  • Fanon seeds 1 tbsp
  • Loaf 3-4
  • Cinnamon 2-3 sticks
  • Black Pepper (Crushed) 1 tbsp
  • Coriander seeds 1 tbsp
  • Oil/ Clarified Butter 1 cup
  • Salt to taste

 

Method:

 

For Moti:

  1. In a chopper, add green chili, chicken mince, red chili powder, onion, ginger garlic paste, turmeric powder, Garam Masala powder and salt. Chop it
  2. Now make balls of that mixture and add them in steamer & give steam.
  3. Cover half of balls with silver. Moti is ready.

 

For Rice:

  1. Soak rice for 2 hours.
  2. Now make potli of, Cumin seeds, Fanon seeds, Loaf, Cinnamon, Black Pepper (Crushed) and Coriander seeds.
  3. In a pan, add water, chicken cube and potli. Cook it well till fragrance appears.
  4. In another pan, heat oil add onion & golden fry it. Then take out half & of it in a plate.
  5. In rest of onion add ginger garlic paste & cook it well then add chicken stock & baghar.
  6. Now add Rice & cook it.  When rice is almost done then add Moti & cook it on low fire.
  7. Dish it out & sprinkle brown onion & serve it. Moti Pulao is ready.
