Mutton do Piyaza Recipe by Gulzar Hussain

Ingredients:

  • Mutton (With Bones) 1 kg
  • Onion (Slice) 4
  • Yogurt ½ kg
  • Bay Leaves 2-3
  • Whole Red Chilies 8-10
  • Finely Chopped Green Chilies 6-8
  • Chopped Ginger Garlic 2 tbsp
  • All Spice Powder 2 tbsp
  • Whole Black Cardamom 3-4
  • Cinnamon 3-4
  • Whole Black Pepper Corns 1 tsp
  • Clarified Butter 1 cup
  • Salt to taste

 

Method:

  1. Take a cooking pan add 1 cup of clarified butter, 3-4 whole black cardamom, 2-3 bay leaves, 8-10 whole red chilies, 1 tsp of whole black pepper corns, 3-4 sticks of cinnamon, w3hen its popping then add 1 kg of mutton meat (with bone) and roasted, add2 tbsp of chopped ginger garlic, roasted 2-3 minutes, then add ½ kg of yogurt mix it well for 2-3 minutes then add as required water to tender the mutton. When the mutton is tender add 4 fried and crushed onions, 1 tbsp of all spice powder, 6-8 finely chopped green chilies add to taste salt mix it well cook until the oil comes up. Now take it out in a serving dish. Mutton do piyaza is ready.
