Palak Raita by Shireen Anwar at Masala Mornings

Ingredients:
Yogurt (whipped)                2 cups
Spinach (chopped, blanched)    1 pao
Lemon Juice                    2 tbsp
Oil                                ½ cup
Cumin (roasted)                ½ tsp
Salt                                ¼ tsp
Chilly Powder                    ¼ tsp
All Spice                        ¼ tsp
Rai                                ¼ tsp
        
Method:
Boil spinach for 15 min, drain water and squeeze. Heat oil in a frying pan , add rai, spinach, salt, cumin, chilly powder and stir well. Remove from heat and set aside to cool completely . Combine yogurt, lemon juice in a bowl and mix in fried spinach with a fork. Sprinkle all spice before serving
